Ingredients

  • 320 g Spaghetti

  • 150 g Guanciale

  • 50 g White wine

  • 1 Fresh chili pepper

  • 400 g Peeled tomatoes

  • 75 g Pecorino romano

  • Fine salt to taste

Directions

  • Para preparar espaguetis all’amatriciana, primero hierva el agua para cocinar la pasta a salar y luego hierva. Luego puede dedicarse al aderezo: tome el guanciale, retire la cáscara 
     y córtalo en rodajas de aproximadamente 1 cm de grosor; Corta las rodajas en tiras de aproximadamente medio cm
  • Sofríelo a fuego lento durante 7-8 minutos en una sartén de hierro o acero
  • La grasa del tocino debe volverse transparente y la carne crujiente.
